The Recipe
Grounding Red Lentil Stew
Serves 4 · Prep 10 min · Cook 30 min · Plant-Based · Gluten-Free
Ingredients
- 1 cup dried red lentils, rinsed
- 1 tbsp extra virgin olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1½ tsp ground turmeric
- 1 tsp ground cumin
- ¼ tsp black pepper
- 1 medium sweet potato, cubed
- 1 can (14 oz) diced tomatoes
- 1 can (13.5 oz) full-fat coconut milk
- 3 cups vegetable broth
- 2 cups baby spinach or kale
- Sea salt, to taste
- Fresh cilantro & lemon, to serve
Instructions
- Sauté the aromatics. Warm olive oil in a large pot. Add onion and cook until soft, about 5 minutes. Stir in garlic and ginger and cook 1 minute more.
- Bloom the spices. Add turmeric, cumin, and black pepper. Stir 30 seconds to awaken the flavors and support turmeric absorption.
- Build the base. Add sweet potato, lentils, tomatoes, coconut milk, and broth. Stir gently and bring to a soft simmer.
- Simmer. Cover partially and cook 20–25 minutes, until lentils are tender and the sweet potato is soft.
- Finish with greens. Stir in spinach or kale and let wilt for 2 minutes. Season with sea salt.
- Serve mindfully. Ladle into bowls, top with fresh cilantro and a squeeze of lemon. Take a breath before your first bite.
