The Recipe
Ingredients & Instructions
For the Bowl
- 1 cup quinoa (rinsed)
- 2 cups filtered water or vegetable broth
- 1 cup shredded purple cabbage
- 1 cup grated carrots
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 cups baby spinach or kale
- 1/4 cup fresh parsley or cilantro
- 2 tbsp pumpkin or hemp seeds
Lemon-Tahini Dressing
- 1/4 cup tahini
- Juice of 1 lemon
- 1 small garlic clove, minced
- 1 tsp raw honey or maple syrup
- 2–3 tbsp warm water (to thin)
- Sea salt & pepper to taste
Instructions
- Cook the quinoa. Combine rinsed quinoa with water or broth in a pot. Bring to a boil, reduce heat, cover, and simmer 15 minutes. Remove from heat and let rest 5 minutes, then fluff with a fork.
- Prep the veggies. While the quinoa cooks, wash and chop the cabbage, carrots, pepper, tomatoes, greens, and herbs.
- Whisk the dressing. In a small bowl, whisk tahini, lemon juice, garlic, honey, salt, and pepper. Slowly add warm water until silky and pourable.
- Build your bowls. Layer greens, warm quinoa, and each colorful veggie in sections. Top with avocado, seeds, and fresh herbs.
- Drizzle & enjoy. Generously spoon the lemon-tahini dressing over the top and dig in while everything is fresh and vibrant.
Helpful Substitutions
Swap quinoa for brown rice or millet. Use sunflower seed butter in place of tahini for a nut-free option. Add chickpeas or baked tofu for extra protein. Any seasonal veggie works beautifully — let the rainbow guide you.
