
I found an old recipe that a friend gave me about 12 years ago. I had never had "real" toffee, so I wasn't really interested in making these "Toffee Bars." But after reading the original recipe and realizing that I had all of the ingredients in my rental kitchen, I decided to make them in an effort to use up this food before we move back to Florida. I was so surprised to find that they are actually delicious!
Here is my keto version of 'Toffee Bars'
This is a Quick Super Easy Delicious cookie/bar that is Low Carb, Keto, Diabetic Friendly and satisfying.
Jackie's Toffee Bars
1 C. Almond Flour
3/4 C. Einkorn Wheat or regular unbleached Flour
1/4 C. Oat Fiber
1 C. Butter (softened)
1 C. Coconut Palm Sugar
1/4 C. Allulose
2 tsp. Vanilla Extract
1 egg yolk
9 oz bag of (No Added Sugar) Milk Chocolate Chips
1 Cup of chopped Nuts

Directions:
1.In a small bowl, whisk your Flours together
2. In a medium bowl beat the butter until creamy. Add the Sweeteners and beat again.
3. Add the egg yolk and beat until smooth.
4. Using a Wooden Spoon or spatula stir in the Vanilla Extract
5. Add the flours and stir until you form a dough.
6. Transfer this dough onto a Non-stick Baking sheet and press to form a rectangle, even thin layer.
7. Bake at 350* for about 10 minutes until lightly browned.
8. While the cookie bakes, Melt 1 9oz bag of No added Sugar Chocolate Chips in a Microwave, using 30 Sec intervals to make sure the chocolate doesn't burn.
9. Spoon the Melted Chocolate onto the warm Cookie , gently spread to the corners.
10. Sprinkle with a cup of chopped Nuts, gently press into cookie dough to make sure the Nuts don't fall off.
11. Allow to cool complete before cutting into squares. Good Warm or Cold straight out of the Fridge.
